This baby of mine lately has me craving any form of pizza....thin crust, deep dish, frozen, pizza rolls, etc. You name it, this baby loves it! One day I suddenly had a major crave for a Taco Bell Mexican Pizza with no Taco Bell near by. My solution was this at home vegetarian version. I loved how this recipe came out, but next time I think I'll try adding Trader Joe's vegetarian chorizo!
VEGETARIAN MEXICAN PIZZA
+flour tortillas
+salsa
+diced green onions
+cilantro
+shredded cheese (I used a Mexican cheese blend)
+vegetarian refried beans
-Pre-heat your oven to 350 degrees. I used a pizza stone, which helped make the tortillas crunchy, but you can easily use a baking sheet.
-Place a tortilla in the oven for 10-12 mins. or until it has a nice crunch.
-Take the toasted tortilla out & spread the refried beans out in a nice layer, then top with another tortilla. Sprinkle cheese on your second tortilla & place back into the oven for another 10-12 mins.
-Lastly, top with green onions, salsa, & cilantro.
*I didn't have any olives at home, but sliced black olives would make another tasty topping!
