BASIL + PEA SOUP
* 1 large onion
* 1 can of vegetable or chicken stock
* 3-4 c. frozen peas (my favorite is Trader Joe's)
* handful of fresh basil (leave a little extra to garnish)
* salt + pepper to taste
* a few tbsp. vegetable or olive oil
* blender or hand immersion blender (I use a Blendtec brand blender)
Dice the whole onion + sauté in vegetable oil until tender (approx. 10 mins.), then add stock + peas. Bring to a boil + let simmer for 10 mins. Take off heat, add fresh basil + salt/pepper to taste. Pour the mixture into your blender + blend away (I like to keep mine a little on the chunky side to allow for a little extra bite)! Let your soup cool + store in the fridge until you're ready to serve.
